Yong Huang harvests lettuce Feb. 20, 2006 that was
grown using a new spiraling system created by his Epcot Science team. Huang and the Epcot team created the agricultural system by combining a “film” technique of nutrients with a spiral-shaped growing system to
produce vertically grown lettuce. Approximately one dozen spiraling lettuce units were transplanted from the backstage areas at The Land to the experimental show greenhouses that guests tour on the “Living
with the Land” boat ride inside the theme park. Once harvested, the lettuce will be served on salads at theme park restaurants. Epcot is one of four theme parks at Walt Disney World Resort in Lake Buena Vista, Fla. (Diana Zalucky, photographer)
